AGED: CERTIFIED ORGANIC AGED BALSAMIC VINEGAR OF MODENA 250ml. Seggiano Certified Organic Aged Balsamic Vinegar of Modena, has body with balanced sweet and sour flavours and a natural rich, dark colour. Its fragrant and complex flavour derives from the traditional natural fermentation methods used, with acetification and ageing occurring in special traditionally made wooden barrels which impregnate the vinegar with their aroma. It has no added caramel (E150), which some producers add to colour and thicken, nor does it contain sulphites.
Aged Balsamic Vinegar is thicker, sweeter and more aromatic than matured balsamic vinegar, due to a longer reducing and ageing period in these wooden barrels.
The ageing process must be between four and twelve years but this cannot be specified on the label as there can be considerable variation in production methods. In 2005 our reserved barrels had been aged for six years. Free of pesticides and preservatives, this is the earliest batch of certified organic balsamic vinegar that our producer, who is from one of the oldest vinegar producing families in Modena, deems to have “come of age”. Use this as a seasoning on cooked meats, such as duck and lamb. It is also a delicious addition to salads, fresh fruit and mild creamy cheeses. Summer strawberries are particularly good marinated in our balsamic vinegar.

MATURED: CERTIFIED ORGANIC MATURED BALSAMIC VINEGAR OF MODENA 250ml. This smooth and mellow Seggiano Organic Balsamic Vinegar of Modena is made from organically grown grapes which are naturally fermented to create a harmonious balance of flavours, aromas and texture. It has no added caramel (E150), which some producers add to colour and thicken, nor does it contain sulphites.
Made in Modena according to strictly controlled methods, the must (grape juice) of organic grapes from Emilia Romagna is blended with organic wine vinegar and matured in aged wooden barrels through a slow and careful process The result is a balanced authentic high quality vinegar. Use in sauces, dressings and marinades.
